STIR-FRIED VEGETABLES (Chinese, Vegan, Vegetarian)


 


 



Ingredients  ( 4-6 servings )


1 small carrot     1 small zucchini     1 cup broccoli florets     1 cup snow peas (I did not use)     


1 cup water chestnuts (I did not use)     1 cup cremini mushrooms (I did not use)  1 cup asparagus (I did not use)    ½ small yellow bell pepper    


 ½ small red bell pepper     Handful of soya bean sprouts     2 tbsp sliced almonds     2 tbsp soya sauce


2 tbsp sesame oil (decrease the amount if you will not use all the ingredients)     2 tbsp soya sauce


½ tbsp olive oil (for the mushrooms)     Salt, pepper     


Optional: 16 jumbo shrimp sautéed in garlic and olive oil.

 



Instructions


1.  Wash, drain and julienne the zucchini and carrot into matchstick pieces. You can leave the skin of the zucchini on.


2.  Rinse the water chestnuts and soak in water with 1 tsp baking soda for about 10 minutes to bring out the taste. Peel, rinse and slice in circles.


3.  Wash and drain the other vegetables. Wipe the mushrooms. If you prefer to wash them, make sure they are dry before you cook them.


4.  Dry-toast the almonds in a small pan or skillet.  Set aside.


5.  Sauté the mushrooms in a small pan or skillet with ½ tbsp olive oil until all liquid is drained. Set aside.


6.  Heat the sesame oil in a wok or large skillet.


7.  Add the carrots and stir for about 2 minutes over medium-high heat.


8.  Add the broccoli florets, water chestnuts, asparagus and snow peas. Stir for about 3 minutes.


9.  Add the zucchini, red bell peppers and yellow bell peppers and sauté for about 2 minutes.


10.  Add the soya sauce. Keep stirring.


11.  Check and see if the vegetables are cooked but firm. Continue stirring until they are done. Do not overcook.


12.  Add the cooked mushrooms and shrimp (if using) and stir for a minute.


13.  Turn off the heat. Add the toasted almonds and soya bean sprouts. Stir a couple of times.


14.  Serve immediately. 

 

Note: You can make this dish with a few or all of the vegetables listed in the ingredients list. Adjust the sesame oil amount accordingly.
