EGGS WITH SOYA GRANULES AND ZUCCHINI (Turkish, Vegetarian)
Ingredients ( 1 serving )
2 eggs 1/3 cup soya granules 1 medium onion
1 large ripe tomato 1 small zucchini 1 tbsp olive oil
Plenty of chopped fresh dill Salt, pepper Grated parmesan (optional)
Optional: 1 tbsp olive oil and hot red pepper flakes
Instructions
1. Soak the soya granules in boiling water for
half an hour.
2. Cut the stem of the zucchini off and scrub well. Leave the skin on if not too thorny. Shred the zucchini with a box grater.
3. Chop the onions and tomato finely. You can run the tomato in a food processor. Do not drain.
4. Drain and gently squeeze the liquid out of the soya granules.
5. Heat the olive oil in a pan. Sauté the onions for 5 minutes until they are transparent.
6. Add the soya granules and sauté for 5 minutes. Add the tomatoes and mix well. Add salt and pepper to taste. Cook on medium-low heat, uncovered, for 10 minutes stirring occasionally.
7. Spread the shredded zucchini on top of the soya granules. Make two
dents and break the eggs over the zucchini. Garnish with plenty of chopped
fresh dill.
8. Cover the pan and cook on medium heat until the eggs are done to
your desired consistency.
10. Optional: Sprinkle with grated parmesan.
NOTES: The original dish is made with ground beef, veal or lamb. It turned out amazingly well with soya granules. The recipe for soya granules, a substitute for ground beef/veal/lamb which is often used in Turkish cooking, keeps well in the fridge for two days and can be used to make a variety of dishes. You can use this recipe link to prepare it in advance and add it to zucchini, eggplants, potatoes, spinach and other vegetables.
BASIC SOYA GRANULES RECIPE FOR TURKISH COOKING ( Turkish, Vegan )
You can omit the soya granules and prepare this dish with just zucchini, olive oil, onions, eggs, dill and optional garnish ingredients.
